Recipes Zucchini with Tomatoes and Shallots February 23, 2023 I love this combination of vegetables. The tomatoes add a great burst of fresh flavor. Perfect for any season. Ingredients: 2 tbsp EVOO 2 tbsp butter 1 shallot, sliced 5 medium zucchini, sliced 3 medium tomatoes, diced Salt and pepper, to taste Directions: Heat up EVOO and butter in a large skillet over medium heat. Add shallot to skillet and cook for 3 minutes. Add zucchini and tomatoes and cook an additional 6 minutes until cooked through and tender. Salt and pepper to preference. Thanks for Sharing!
