Zucchini with Tomatoes and Shallots

I love this combination of vegetables.  The tomatoes add a great burst of fresh flavor. Perfect for any season. 

Ingredients:
  • 2 tbsp EVOO
  • 2 tbsp butter
  • 1 shallot, sliced
  • 5 medium zucchini, sliced
  • 3 medium tomatoes, diced
  • Salt and pepper, to taste
Directions:
  1. Heat up EVOO and butter in a large skillet over medium heat.
  2. Add shallot to skillet and cook for 3 minutes.
  3. Add zucchini and tomatoes and cook an additional 6 minutes until cooked through and tender.
  4. Salt and pepper to preference.
