Roasted Sweet Potatoes

Enjoy these sweet potatoes as a side dish to any main dish. They are rich in vitamins (loaded with vitamin C, potassium, calcium, and vitamin A) your body will enjoy.

Ingredients:
  • 3-4 medium sweet potatoes, peeled and cubed
  • 3 tablespoons light olive oil
  • Salt and pepper to taste
Directions:
  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Place sweet potatoes in a bowl and toss with olive oil, salt, and pepper.
  3. Place mixture on a baking sheet and bake for 30-40 minutes, until sweet potatoes are tender.
