Roasted Brussel Sprouts

This is an easy, simple, and delicious brussel sprout recipe.  These can be used as an appetizer or a side dish to any meal. 

Ingredients:
  • 1 pound brussel sprouts, ends trimmed and quartered
  • 2 tbsp EVOO
  • 4 garlic cloves, minced
  • 2 tea lemon juice
  • 2 tbsp honey
  • Salt and pepper
  • ½ cup parmesan cheese, freshly grated
  • ½ cup pistachios
Directions: 
  1. Preheat oven to 400°F. Line a baking sheet with parchment paper. 
  2. In a large bowl combine all the ingredients (EXCEPT the nuts).  
  3. Spread mixture evenly onto baking sheet and bake for 25 minutes until Brussel sprouts are golden brown.  Midway through baking time, add nuts and stir mixture.
  4. Cool and serve.
