Roasted Asparagus

This is a super easy veggie dish to add to any meal.  Add some color and nutrients in with this simple side dish that takes minimal prep time.

Ingredients:
  • 2 bunches of asparagus
  • 2 tbsp olive oil
  • Salt and pepper
Directions:
  1. Preheat oven to 350°F.  Line a baking sheet with parchment paper or foil.
  2. Wash asparagus and allow it to dry on a clean towel.  Snap off ends and place on the prepared baking sheet.
  3. Drizzle olive oil, salt, and pepper over the top and toss with hands to evenly coat.
  4. Bake for 15 minutes for asparagus that still has a crunch.  Longer if you prefer it more cooked.
