We eat a lot of eggs in our house. I make eggs almost every morning for my family and these are a great way to change it up. Packed with so much flavor you are sure to get a lot of nutrient-dense food into you first thing in the morning. If your kiddos don’t like spinach, you can leave it out. I also like to top these with some hot sauce and fresh sliced avocados. So yummy!
Ingredients:
- 10 eggs
- 1 tbsp butter
- ½ cup ham, diced
- 1 cup fresh spinach, chopped
- ½ cup shredded cheese of choice
- Salt and pepper to taste
Directions:
- Crack eggs into a medium bowl and gently whisk to break yolks.
- In a medium saucepan, melt 1 tablespoon of butter. Add ham and spinach and cook for about 2 minutes.
- Add eggs, cheese, salt, and pepper. Continue to stir gently until the eggs are completely cooked.
