This savory breakfast casserole is delicious and easy to make. Make it ahead of time when you have a busy week coming up and rewarm individual servings as needed. This casserole pairs very well with our blueberry scones.
Ingredients:
- 2 cups spinach, roughly chopped
- 2 cups shredded sharp cheddar cheese
- 2 tea butter
- ½ onion, diced
- 1 red bell pepper, diced
- 12 large eggs
- ½ cup all-purpose flour
- 1 tea baking powder
- 1 tea salt
- ½ tea pepper
- 1 ½ cups cottage cheese
Directions:
- Preheat oven to 350°F. Grease a 9 x 13 casserole dish.
- Over medium heat sauté onions, red peppers, and ham for about 5 minutes.
- In the meantime, place spinach at the bottom of prepared casserole dish and top with ½ of the shredded cheese.
- Then layer the onion mixture on top and spread evenly.
- In a medium bowl, whisk eggs together. Add flour, baking powder, salt and pepper and whisk until combined. Then, stir in cottage cheese. Pour this mixture over spinach and onion mixture.
- Bake for 45 minutes, until egg is set and fluffy. Allow to cool for 5-10 minutes prior to serving.
