These are a simple and delicious side dish that can go with many different main dishes. They are filling and hearty.
Ingredients:
- 1.5 lb baby gold potatoes, quartered
- 1 tbsp EVOO
- 4 tbsp butter, cubed
- 4 garlic cloves, crushed
- 2 tea salt
- 1 tea pepper
- ½ cup freshly shredded parmesan
Directions:
- Preheat oven to 400°F.
- Place potatoes and garlic on a baking sheet. Drizzle with EVOO, salt, and pepper; toss to coat.
- Bake for 20 minutes. Take out and smash with fork and toss in parmesan then return to oven for an additional 10 minutes until golden brown and cooked through.
- Cool then enjoy.
