Garlic Smashed Potatoes

These are a simple and delicious side dish that can go with many different main dishes.  They are filling and hearty.

Ingredients:
  • 1.5 lb baby gold potatoes, quartered
  • 1 tbsp EVOO
  • 4 tbsp butter, cubed
  • 4 garlic cloves, crushed 
  • 2 tea salt
  • 1 tea pepper
  • ½ cup freshly shredded parmesan
Directions: 
  1. Preheat oven to 400°F. 
  2. Place potatoes and garlic on a baking sheet.  Drizzle with EVOO, salt, and pepper; toss to coat.
  3. Bake for 20 minutes.  Take out and smash with fork and toss in parmesan then return to oven for an additional 10 minutes until golden brown and cooked through. 
  4. Cool then enjoy.
