Chocolate Pudding with Homemade Whipped Cream

Can you say yum? This pudding is smooth and chocolatey and doesn’t have all the additives that store-bought pudding does.  If your kids love pudding, make a big batch and keep it in the fridge for them to snack on.

Ingredients:
  • 1 cup sugar
  • ½ cup cocoa powder
  • ¼ cup cornstarch
  • ½ tea salt
  • 4 cups whole milk
  • 2 tbsp butter
  • 2 tea vanilla extract
  • ½ heavy whipping cream
  • 2 tbsp maple syrup
Directions:
  1. In a heavy saucepan, combine sugar, cocoa, cornstarch, and salt.  Gradually add in milk and whisk until combined. Bring to a boil over medium heat.  Continue to stir frequently to avoid scorching the bottom.  The mixture will begin to thicken as it comes to a boil.  This can take about 5-10 minutes. 
  2. Once boiling, continue to stir for 2 minutes.  Remove from heat and stir in butter and vanilla. Pour into desired serving dishes, cover, and refrigerate until firm. 
  3. For whipped topping, combine heavy whipping cream and maple syrup in a bowl.  Whip with an electric mixer until the mixture is thick and resembles whipped cream. 
  4. Once the pudding is firm and ready to serve, place a dollop of whipped cream on top and enjoy.
