This is a simple and delicious cheesecake recipe. The combination of cheesecake and chocolate is simply perfect for any chocolate lovers out there. Top with whipped cream or fruit if desired.
Ingredients:
- 26 chocolate sandwich cookies
- 5 tbsp butter, melted
- 4 ounces chocolate, melted (semi-sweet or bittersweet)
- 16 ounces cream cheese, at room temperature
- 1/2 cup sugar
- 2 tbsp cocoa powder
- 2 large eggs, at room temperature
- 1 tbsp vanilla extract
- ½ cup sour cream, at room temperature
Directions:
- Preheat the oven to 350°F. Line a 9-inch square pan with parchment paper.
- Remove and discard filling from each cookie and place in a plastic bag or food processor. Crush cookies into a fine crumble. Place in a bowl and stir in butter until combined. Press into prepared pan.
- In a mixing bowl, beat cream cheese, sugar, and cocoa powder until well combined. Scrap down sides of bowl if needed.
- Beat in eggs, vanilla, and sour cream. Then add melted chocolate and beat until all ingredients are well combined.
- Pour batter over crust and spread evenly. Bake for 15-18 minutes. The center of the cheesecake will still be slightly jiggly.
- Cool completely then place in refrigerator for 2 hours until firm.
- To serve, cut into squares and place a dollop of whipped cream on top.
