Chocolate Cheesecake Bars

This is a simple and delicious cheesecake recipe.  The combination of cheesecake and chocolate is simply perfect for any chocolate lovers out there.  Top with whipped cream or fruit if desired.

Ingredients:
  • 26 chocolate sandwich cookies
  • 5 tbsp butter, melted
  • 4 ounces chocolate, melted (semi-sweet or bittersweet)
  • 16 ounces cream cheese, at room temperature
  • 1/2 cup sugar
  • 2 tbsp cocoa powder
  • 2 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • ½ cup sour cream, at room temperature
Directions: 
  1. Preheat the oven to 350°F. Line a 9-inch square pan with parchment paper.
  2. Remove and discard filling from each cookie and place in a plastic bag or food processor.  Crush cookies into a fine crumble. Place in a bowl and stir in butter until combined.  Press into prepared pan.
  3. In a mixing bowl, beat cream cheese, sugar, and cocoa powder until well combined.  Scrap down sides of bowl if needed.
  4. Beat in eggs, vanilla, and sour cream.  Then add melted chocolate and beat until all ingredients are well combined.
  5. Pour batter over crust and spread evenly. Bake for 15-18 minutes. The center of the cheesecake will still be slightly jiggly. 
  6. Cool completely then place in refrigerator for 2 hours until firm.  
  7. To serve, cut into squares and place a dollop of whipped cream on top.
