Chicken Noodle Soup

Homemade Chicken Noodle Soup

This soup is a gentle reminder of the simplicity of childhood. Warm, comforting, and nourishing.

Ingredients:

-whole chicken

-1 tablespoon salt

-2 tea pepper

-2 tea garlic powder

-3 carrots, diced

-1 onion, diced

3 stalks of celery, diced

-3 cloves garlic, minced

-1-6 oz button mushrooms, diced

-1-6 oz vermicelli noodles, the really thin ones

Directions

1. Place a whole chicken in a large soup pot and fill with enough water to cover the chicken.

2. Add salt, pepper, garlic powder, and onion powder. Simmer for an hour then turn off heat and let sit for about 4-6 hours in seasoned water.

3. Take chicken out of the broth. Then, debone, shred, and set aside.

4. Strain broth and return to pot. Bring broth to a simmer and check flavor. Add salt and spices to your liking. Then add diced carrots, onions, celery, minced garlic, and mushrooms. Simmer for about 20 minutes then add thin vermicelli noodles. Cook until noodles are al dente and then add shredded chicken.

5. Do one last taste test to make sure it is perfectly seasoned and enjoy!

So simple and nourishing. This soup keeps very well in the fridge for up to one week.
