Pie crust filled with brie and blackberries. You will not regret making these! I promise. They are one of my go-to appetizers to impress the crowd. Bonus is that they can also take the place of dessert with just enough sweetness provided from the blackberry jam.
Ingredients:
- Pie crust (I prefer homemade, but storebought works)
- 8 ounces brie, rind removed
- ¼ cup blackberry jam
- fresh blackberries, cut in half longwise
Directions:
- Preheat oven to 400°F. Prepare a mini muffin pan.
- Roll out pie crust and cut into 2 inch circles. (Note: I use a biscuit cutter.)
- Gently press each pie crust round into mini muffin pan. Place a small chunk of brie inside each round.
- Bake for 12 minutes, until pie crust is cooked through. Remove from oven and cool for 5 minutes.
- Remove from muffin pan and place a small teaspoon of jam on top of brie then top with a blackberry half, pretty side up.
