These scones are better than any I have ever bought at a bakery and are bursting with blueberries. This is a great recipe to serve for brunch or just have on hand for an afternoon snack.
Ingredients:
- 4 cups all-purpose flour
- 1 cup sugar
- 5 tea baking powder
- 2 tea ground cinnamon
- 1 tea salt
- 1 cup (2 sticks) butter, cold
- 1 cup heavy cream
- 2 large eggs
- 3 tea vanilla extract
- 2 cups frozen blueberries
For glaze:
- ½ cup confectioners sugar
- 1 tbsp of milk
- 1 tbsp fresh lemon juice
Directions:
- Preheat oven to 400°F.
- In a large bowl, whisk flour, sugar, baking powder, cinnamon, and salt together.
- Grate butter and add it to flour mixture. Use your hands to toss and coat butter.
- Whisk heavy cream, eggs, and vanilla together in a small bowl. Drizzle over flour mixture, add blueberries, and mix together until everything is incorporated. There might be some loose flour.
- Place mixture onto a well-floured surface and using hands shape into a 1-inch thick round. Using a bench scraper, cut to desired size and shape. Place on a parchment-lined baking sheet.
- Bake for 22 minutes until the bottoms and edges are golden brown. Remove from oven and cool on wire racks.
