Blueberry Compote

Blueberry Compote

This is a great way to add some flare to homemade pancakes, waffles, or even oatmeal.  The lemon brightens up the flavor of the blueberries just a bit for the perfect burst of flavor with every bite. 

Ingredients: 
  • 3 cups fresh blueberries
  • 3 tbsp water
  • 1 tbsp lemon juice
  • ¼ cup sugar
  • ¼ tea cornstarch
Directions:
  1. Combine 2 cups of blueberries, water, sugar, and lemon juice in a small saucepan. 
  2. Cook over medium heat for about 10 minutes. Add the rest of the blueberries and sprinkle cornstarch over while you stir.  Cook for an additional 8 minutes, stirring frequently. 
  3. Serve warm or cold.
