You officially join the healthy pancake train when you try this recipe out. They have a bit of natural sweetness from the bananas and are soft and fluffy. We topped ours with homemade whipped cream and strawberries. Enjoy!
Ingredients:
- 2 ripe bananas
- 2 eggs
- ½ cup unsweetened coconut milk
- 1 tea vanilla extract
- 1 ½ cups old-fashioned rolled oats
- 2 tea baking powder
- ½ tea ground cinnamon
- ¼ tea salt
- Coconut oil, for cooking
Directions:
- Add all ingredients into the blender and blend on high until completely smooth.
- Light coat the griddle with coconut oil and place over medium heat.
- Once pan is hot, add 1/3 cup batter to pan and cook for about 2-3 minutes per side until cooked through.
- You can top with fresh whipped cream and strawberries or any other fruit you prefer.
Note: I used a pan with heart shapes and it made 18 pancakes.
