This recipe can be used to make baked sweet potatoes or russet potatoes. I did this one night when we had friends coming over. The woman preferred sweet potatoes and the man preferred russet, so I made both. They bake at the same temperature for the same amount of time. Get creative with the toppings and make a little potato bar to make it fun for the family.
Ingredients:
- Russet potatoes (as many as you need)
- Sweet potatoes (as many as you need)
- Olive oil
- Salt and pepper
- Toppings as desired: green onions, sour cream, brown sugar, butter
Directions:
- Preheat oven to 425°F. Line a baking sheet with foil.
- Wash and dry potatoes. Using a knife or fork poke multiple holes in each potato. Place on baking sheet.
- Coat russet potatoes in olive oil, salt, and pepper.
- Bake for 40-50 minutes until a knife can glide easily into the potatoes.
- Allow to cool for 10 minutes. Slice open and add whatever toppings your heart desires.
