Baked Breakfast Oatmeal

This baked oatmeal is a household favorite for adults and kids. It’s so hearty and delicious. Perfect for cold, crisp mornings. We are sad when it is gone.

Ingredients:
  • 2 cups old-fashioned oatmeal
  • 1/2 cup light brown sugar
  • 1 cup chopped walnuts
  • 1/2 cup raisins
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 2 large eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons melted butter
  • 2 apples, peeled and diced
Directions:
  1. Preheat oven to 325°F. Grease an 8-inch baking dish with butter.
  2. Combine oats, brown sugar, half of the nuts, raisins, baking powder, cinnamon, and salt in a medium bowl. Mix well.
  3. In another bowl, whisk eggs, milk, butter, and vanilla together. Then add this mixture to the mixture.
  4. Place apples evenly on the bottom of the pan. Pour over the oat mixture and then sprinkle with the remaining nuts. Bake for 45 minutes.
