Ingredients:
3-4 medium sweet potatoes, peeled and cubed
3 tablespoons light olive oil
Salt and pepper to taste
Directions:
Preheat oven to 425°F and line a baking sheet with parchment paper.
Place sweet potatoes in a bowl and toss with olive oil, salt, and pepper.
Place mixture on a baking sheet and bake for 30-40 minutes, until sweet potatoes are tender.
