Banana Bread

How to make the very best Banana Bread! This is my absolute favorite recipe for using up overripe bananas, it’s soft, moist, and bursting with flavor. Slathered with melted butter it’s perfect alongside a hot cup of coffee for breakfast.-1/2 cup shortening

-1 ½ cups sugar

-2 eggs

-1 cup mashed bananas

– ½ cup chopped pecans

-2 cups flour

-1 tea baking soda

– ½ tea salt

– 1 tea vanilla

Directions:

1. With a handheld mixer, blend shortening and sugar until completely mixed.  Add eggs and mix.  

2. Add bananas, pecans, and vanilla and mix together well.  

3. In a separate bowl, mix together flour, baking soda, and salt.  Then add to the wet mixture.  

4. Pour into parchment-lined or greased loaf pans.  Bake at 350 degrees for about 50 minutes, until a toothpick comes out clean.  Makes 2 loaves.
