Mini Cheddar Meat Loaves

These individual-size meat loaves are a hit in my family.  They are filling and hearty with a sweet little sauce drizzled over the top.  I usually serve them with a side of potatoes and whatever veggie I have in the fridge.

Ingredients:
  • 1 egg
  • ¾ cup milk
  • 1 cup shredded cheddar cheese
  • 2 slices bread, cubed
  • ½ cup onion, chopped
  • 2 tea salt
  • 1 pound ground beef
  • 2/3 cup ketchup
  • ½ cup brown sugar
  • 1 ½ teaspoons mustard
Directions:
  1. Preheat oven to 350°F. 
  2. Beat milk and egg in a bowl.  Stir in cheese, bread, onion, and salt. 
  3. Add beef and mix well.
  4. Shape into 8 loaves.  Place onto a baking sheet with a cooling rack inserted.  Spray with cooking spray to avoid sticking.
  5. Combine ketchup, brown sugar, and mustard.  Spoon over loaves.  Bake uncovered for 45 minutes.
