Blueberry Scones

Blueberry Scones

These scones are better than any I have ever bought at a bakery and are bursting with blueberries.  This is a great recipe to serve for brunch or just have on hand for an afternoon snack.

Ingredients:
  • 4 cups all-purpose flour
  • 1 cup sugar
  • 5 tea baking powder
  • 2 tea ground cinnamon
  • 1 tea salt
  • 1 cup (2 sticks) butter, cold
  • 1 cup heavy cream
  • 2 large eggs
  • 3 tea vanilla extract
  • 2 cups frozen blueberries
For glaze:
  • ½ cup confectioners sugar
  • 1 tbsp of milk
  • 1 tbsp fresh lemon juice
Directions:
  1. Preheat oven to 400°F.  
  2. In a large bowl, whisk flour, sugar, baking powder, cinnamon, and salt together. 
  3. Grate butter and add it to flour mixture.  Use your hands to toss and coat butter. 
  4. Whisk heavy cream, eggs, and vanilla together in a small bowl.  Drizzle over flour mixture, add blueberries, and mix together until everything is incorporated.  There might be some loose flour.  
  5. Place mixture onto a well-floured surface and using hands shape into a 1-inch thick round.  Using a bench scraper, cut to desired size and shape. Place on a parchment-lined baking sheet. 
  6. Bake for 22 minutes until the bottoms and edges are golden brown. Remove from oven and cool on wire racks.
