This breakfast casserole is perfect for any brunch, special occasion, or breakfast for your family. It is almost like a breakfast bread pudding! So yummy and filling. Make it the night ahead and bake it up in the morning.
Ingredients:
- 1 loaf of French bread, cut into 1-inch cubes
- 1 cup fresh blueberries
- 1 cup fresh strawberries, diced
- 1 package cream cheese, softened
- 12 eggs, beaten
- 2 cups milk
- 1 tea vanilla extract
- 1/3 cup maple syrup
- Dash of salt
Directions:
- Prepare a 9×13-inch casserole dish by greasing it with butter.
- Place half of the bread cubes in the prepared dish and then sprinkle ½ of the blueberries and ½ of the strawberries over the top. Repeat this step.
- In a medium bowl, beat eggs and cream cheese together. (Cream cheese will not fully incorporate.) Add remaining ingredients and mix well.
- Pour mixture over bread crumbs. Use your hands, and press down on the mixture to allow all bread cubes to be covered in liquid. Cover with foil and refrigerate overnight.
- Remove from refrigerator 30 minutes prior to baking.
- Preheat oven to 350°F. Bake the casserole with foil on for 30 minutes then remove the foil and bake for an additional 25 minutes.
- To serve: Top with whipped cream, fresh fruit, and a drizzle of maple syrup.
