Banana Oatmeal Pancakes

You officially join the healthy pancake train when you try this recipe out.  They have a bit of natural sweetness from the bananas and are soft and fluffy.  We topped ours with homemade whipped cream and strawberries.  Enjoy!

Ingredients:
  • 2 ripe bananas
  • 2 eggs
  • ½ cup unsweetened coconut milk
  • 1 tea vanilla extract
  • 1 ½ cups old-fashioned rolled oats
  • 2 tea baking powder
  • ½ tea ground cinnamon
  • ¼ tea salt
  • Coconut oil, for cooking
Directions:
  1. Add all ingredients into the blender and blend on high until completely smooth.
  2. Light coat the griddle with coconut oil and place over medium heat.
  3. Once pan is hot, add 1/3 cup batter to pan and cook for about 2-3 minutes per side until cooked through.
  4. You can top with fresh whipped cream and strawberries or any other fruit you prefer.

Note: I used a pan with heart shapes and it made 18 pancakes.
